It All Started When…

In 2013 Patricia Schwabe with her husband Ron Schwabe decided to bring the flavors of traditional Mexican cuisine to the old building in downtown Tucson that they were getting ready to renovate. The previous Graham Brother’s shop became Penca.

Patricia grew up with the influence of her mother’s kitchen, a traditional Mexico City cuisine, full of flavors inspired by the pre-Columbian ingredients, mixed with the influence of the Spanish and French.

Our talented bartenders have traveled through Mexico searching for the best agave spirits from different regions. We created the first Agave Bar in Tucson, bringing Mezcal, Sotol, Bacanora and other native spirits to Tucson and to our guests.
